For the last 15 years or so Christmas dinner for us is Peking duck at Fung’s Kitchen in Houston. Oregon Pinot Noir pairs perfectly with this meal which is one of my favorite things to eat. Having spent a great deal of time in China over the last decade, I have been able to try most of the famous cuisines of China.
Our Grand Opening Weekend was a great success. Both the Grand Opening Weekend and the weekend after Thanksgiving saw huge crowds. I want to apologize to anyone who did not get the proper attention. Even with the extra help we were a little overwhelmed.

Ever since we attended a fund raising event in Houston, charity:water has been a favorite charity of ours. The transparency over how much of the money goes to the intended project and the ability to use google earth to actually view the project even in very remote areas is a great model.

I am always trying to carry the word about Oregon Pinot Noir and Saffron Fields in my travels. Recently got a chance to pour for friends in Hong Kong and Beijing. Its always good to see people get their first taste of Oregon Pinot Noir.

The year in the vineyard starts with pruning all the growth from the previous year and getting the vines ready for the upcoming growing season. In the picture below the vines are freshly pruned. Each wine has been reduced to two canes which are tied to the trellis wire.

Got a chance to taste Chris Berg’s 2012 Saffron Fields juice at Roots wine co. Its still early but the wines are showing great color and very good structure. The wines are exhibiting the typical dark fruit with a hint of cola and sassafras and black pepper on the finish that the wines from our vineyard display. Every vintage is special but this one looks like it will have the little bit extra to make it great.
