Pair with 2021 Estate Chardonnay

#1 Sushi Grade Salmon (Medium Dice)
3 Tablespoons lime Juice
1 Tablespoon Lime Zest
1 Cup Cucumber (Small Dice)
1 Teaspoon Sesame Seeds
1/4 Cup Scallions (Thinly Sliced)
1 Teaspoon Ginger (Grated)
1 Teaspoon Sesame Oil
1 Teaspoon Soy Sauce
1/4 Cup Raw Sushi Rice
1/4 Cup Vegetable Oil
Mix all ingredients except the rice and vegetable oil in a bowl. Taste and season as needed.
Bring 1/4 cup of vegetable oil up to 375F in a pot with plenty of room. Add the raw rice until it
puffs, approximately 20-30 seconds. Pour the pot through a metal strainer with a metal bowl
underneath to catch the hot oil.
Serve the Salmon Tartare over a wonton chip, cracker, or over rice. Add puff rice on top.
