Spinach Salad
12 cups of baby spinach
1 cup corn kernels
1 cup cherry tomatoes halved
1/2 cup red onion sliced
1 large avocado chopped
1/2 cup crumbled goat cheese
1/2 cup pumpkin seeds
Dressing
5 tablespoons olive oil
3 tablespoons white wine vinegar
1 1/2 tablespoons brown mustard
Salt and pepper to taste
Instructions
Step 1: Toast the pumpkin seeds in a sauté pan over medium heat. Stir occasionally until you can start smelling the pumpkin seeds. Remove from heat to cool.
Step 2: Cook corn kernels in the same sauté pan over medium heat for approximately 10 minutes. Corn should be lightly caramelized. Remove from heat to cool.
Step 3: Mix the salad ingredients in a large bowl. Add avocado right before serving. Other ingredients can be combined in advance.
Step 4: Mix the ingredients for the salad dressing in a jar and season to taste. Make sure to mix well.
Step 5: Pour dressing over the salad and toss to evenly coat the salad.
